In the warehouse, which is traditionally located under the roof of agricultural buildings and for reasons of optimal exploitation of the temperature variations between day and night, between spring, summer, autumn and winter, there are now more than <strong>1500 barrels of balsamic vinegar<\/strong>.<\/p><p>Unlike wine barrels, <strong>containers for balsamic vinegar are generally smaller<\/strong>. They are only partly <strong>oak<\/strong>; <strong>locust, maple, ash, walnut, juniper<\/strong> or <strong>cherry<\/strong> wood plays a role in balsamic vinegar.<br \/>In addition to the <strong>25-year-old<\/strong> &#8220;Extravecchio&#8221; and &#8220;Attilio&#8221;, Sereni produces a twelve-years-old Traditional Balsamic, marketed as &#8220;<strong>Affinato<\/strong>&#8220;. It consists exclusively of cooked must of <strong>Trebbiano<\/strong> grape, which has its origins in the region. The round and balanced variety of flavors of the &#8220;<strong>Affinato<\/strong>&#8221; inspires, on the palate it is slightly astringent, with a balanced game of sweetness and sour and a well integrated acidity.<\/p><p>The rare product is bottled in the t<strong>ypical 100 ml spherical bottle with a rectangular bottom and designed by Giorgetto Giugiaro<\/strong> decades ago.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div data-particle_enable=\"false\" data-particle-mobile-disabled=\"false\" class=\"elementor-element elementor-element-f1dd892 e-flex e-con-boxed e-con e-parent\" data-id=\"f1dd892\" data-element_type=\"container\" data-e-type=\"container\">\n\t\t\t\t\t<div class=\"e-con-inner\">\n\t\t<div data-particle_enable=\"false\" data-particle-mobile-disabled=\"false\" class=\"elementor-element elementor-element-c967cde e-con-full e-flex e-con e-child\" data-id=\"c967cde\" data-element_type=\"container\" data-e-type=\"container\">\n\t\t\t\t<div class=\"elementor-element elementor-element-5aebb76 elementor-widget elementor-widget-text-editor\" data-id=\"5aebb76\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>Obviously the <strong>Sereni<\/strong> manufactory also produces other vinegar-based products, after all we play in the \u201c<strong>traditional<\/strong>\u201d category in a price range that fits well into the three-figure per liter range.<\/p>\n<p>The \u201c<strong>Mioaceto\u00ae<\/strong>\u201d that we tried in <strong>25-years<\/strong> \u201cGold\u201d and ten-year \u201c<strong>Red Seal<\/strong>\u201d is an innovation for Sereni. The latter speaks with clear acidity to the nose and palate. Used sparingly on a warm goat cheese salad, it&#8217;s poetry.<\/p><p>The &#8220;<strong>Mioaceto\u00ae Gold<\/strong>&#8221; with its tenuous notes of wood, with a slightly creamy consistency and filigree structure, particularly impressed us.
