The streets are full of parked cars with foreign licence plates, while groups of people flock over the vineyards. It is Acetaie Aperte, the annual festival of the local vinegar makers. The Consorzio Tutela Aceto Balsamico Tradizionale di Modena inaugurated this event to demonstrate just how much the production of this traditional balsamic vinegar from the northern Italian province differs from the imitations in the supermarkets. Around 40 acetaie throw open their doors on the day, offering guided tours and tastings.<\/p><p><strong>Francesco Sereni<\/strong> is someone who can really show curious gourmands what goes into a genuine <strong>Balsamic Vinegar of Modena<\/strong>. The change from <strong>hot summers to cold winters<\/strong> and also the <strong>higher humidity<\/strong> levels result in excellent harvests and a grape must with a more intense flavour,\u2019 says Francesco.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-ca26524 elementor-widget elementor-widget-heading\" data-id=\"ca26524\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Fermentation in barrels<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-2e10781 elementor-widget elementor-widget-text-editor\" data-id=\"2e10781\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>Before the vinegar production itself begins, and in contrast to conventional wine vinegar, the grape must is <strong>boiled<\/strong> to evaporate up to 40-50 per cent of the liquid. During this parts of the sugars caramelise. \u2018<em>The barrel ageing that follows is critical for the flavour<\/em>,\u2019 says the vinegar maker, explaining that this traditionally involves a series of at least five differently sized <strong>barrels<\/strong>.\u00a0<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-0bdd7e9 elementor-widget elementor-widget-heading\" data-id=\"0bdd7e9\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Inoculated by grandmother\u2019s finest essence<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-0846c74 elementor-widget elementor-widget-text-editor\" data-id=\"0846c74\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>Fermentation begins in the largest barrel, after addition of an old <strong>Balsamic vinegar of Modena<\/strong>. The <strong>grape must<\/strong> is periodically transferred through the entire batteria as the bacterial cultures, tannins and enzymes turn it into vinegar. The content of the smallest barrel is <strong>thick and perfect<\/strong>. It is then tapped for consumption or sale. \u2018We have a Traditional Balsamic Vinegar di Modena P.D.O in our range that is matured in <strong>30 barrels<\/strong>. Its flavour is much more complex than that of a young vinegar. You only need tiny amounts for seasoning. Of course, this is also reflected in the price,\u2019 says Francesco. As a point of interest, this flavour-intense Aceto is not matured in cellars like a fine wine, but in the <strong>acetaia\u2019s well-ventilated attic<\/strong>, where seasonal heat and cold have a more direct influence on the fermentation process.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div data-particle_enable=\"false\" data-particle-mobile-disabled=\"false\" class=\"elementor-element elementor-element-5f980be e-flex e-con-boxed e-con e-parent\" data-id=\"5f980be\" data-element_type=\"container\" data-e-type=\"container\">\n\t\t\t\t\t<div class=\"e-con-inner\">\n\t\t\t\t<div class=\"elementor-element elementor-element-17150ec elementor-widget elementor-widget-heading\" data-id=\"17150ec\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Everything vinegar<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-c22018a elementor-widget elementor-widget-text-editor\" data-id=\"c22018a\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>\u00a0If you want the genuine product from Modena, you should <strong>pay close attention to the label<\/strong> when purchasing. Terms such as \u2018<strong>balsamico<\/strong>\u2019, \u2018<strong>balsamic vinegar<\/strong>\u2019 and \u2018<strong>crema di balsamico<\/strong>\u2019 are not protected. Imitations with these names are as far away from a genuine Aceto in terms of taste as a Lada is from a Ferrari. Certified quality comes only under the names \u2018<strong>BALSAMIC VINEGAR OF MODENA P.G.I\u2019<\/strong> (IGP in Italian) and \u2018<strong>TRADITIONAL BALSAMIC VINEGAR OF MODENA P.D.O\u2019<\/strong> (DOP in Italian). These designations have been covered under the EU register of protected geographical indications and can be found on the labels of vinegars that have been produced under the strict guidelines of the Consorzio Tutela Aceto Balsamico di Modena.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-1b45653 elementor-widget elementor-widget-heading\" data-id=\"1b45653\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">\u00a0Young and Mild<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-99275fb elementor-widget elementor-widget-text-editor\" data-id=\"99275fb\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>Balsamic Vinegar of Modena PGI is made from the grape must of the certified grape varieties using selected bacterial cultures. Only caramel is permitted as an additive. It matures in single wooden barrels for at least 60 days, has a fruity, sweet flavour and an acidity of at least six per cent. If this Vinegar has matured in the wooden barrel for more than<strong> three years<\/strong>, you will see the addition of \u2018<strong>invecchiato<\/strong>\u2019. Around 100 million litres of Balsamic Vinegar of Modena PGI are brought to market in Modena every year. The price starts at around five euros per litre and up,\u2019 says Francesco.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div data-particle_enable=\"false\" data-particle-mobile-disabled=\"false\" class=\"elementor-element elementor-element-0cdf0d0 e-flex e-con-boxed e-con e-parent\" data-id=\"0cdf0d0\" data-element_type=\"container\" data-e-type=\"container\">\n\t\t\t\t\t<div class=\"e-con-inner\">\n\t\t<div data-particle_enable=\"false\" data-particle-mobile-disabled=\"false\" class=\"elementor-element elementor-element-e9d9e05 e-con-full e-flex e-con e-child\" data-id=\"e9d9e05\" data-element_type=\"container\" data-e-type=\"container\">\n\t\t\t\t<div class=\"elementor-element elementor-element-06fb5fd elementor-widget elementor-widget-heading\" data-id=\"06fb5fd\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">All good things come to those who wait<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-40cceda elementor-widget elementor-widget-text-editor\" data-id=\"40cceda\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>The higher-quality Traditional Balsamic Vinegar di Modena P.D.O. makes up only a fraction of the annual production at 9,000 litres, as the guidelines are much more stringent. It can be bottled only after a <strong>maturation period of 12 years<\/strong> and a detailed evaluation of consistency, flavour and ingredients by the consortium. And even then, it can only be filled into the teardrop-shaped 100 ml glass bottles of the <strong>famous Italian designer, Giorgio Giugiaro<\/strong>. Balsamic Vinegar di Modena P.D.O. also receives a reddish-yellow cap. The absolute pinnacle of Modena\u2019s vinegars is matured for at least 25 years. You can recognise this syrupy, amazingly sweet and sour and incredibly savoury treat by its golden cap and the addition \u2018<strong>Extravecchio<\/strong>\u2019.<\/p><p>A 100 ml bottle will usually set you back by a three-figure sum. The attic of Acetaia Sereni is home to an even more valuable heirloom: \u2018Our <strong>oldest barrel<\/strong> is <strong>from 1930<\/strong> and holds a balsamic vinegar that my <strong>great-grandmother started<\/strong>. We\u2019re not selling it.
