Infatti, se fermentato, il mosto crudo diventerebbe vino. Il mosto cotto, non essendo fermentato, <strong>non \u00e8 una bevanda alcolica<\/strong>.  <\/p><p>La cottura \u00e8 lenta e prolungata, per diverse ore, a temperatura controllata. Tradizionalmente il mosto veniva cotto in pentole di rame, oggi generalmente sostituite dall\u2019acciaio inox. Si raggiunge inizialmente una temperatura appena sotto il punto di ebollizione, per eliminare le impurit\u00e0 naturali del mosto, rimosse manualmente con mestoli o colini. Successivamente la cottura continua a fuoco lento, intorno ai 65 \u00b0C, per molte ore (24\u201336 ore).    <\/p><p>Il mosto cotto \u00e8 pronto quando gran parte dell\u2019acqua \u00e8 evaporata, <strong>riducendo il liquido a circa met\u00e0 del volume originale<\/strong>.<strong> <\/strong><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div nella categoria PAT (Prodotti Agroalimentari Tradizionali), riconosciuta dal Ministero delle Politiche Agricole, Alimentari e Forestali.<\/p><p><strong>Come si presenta?<\/strong><\/p><ul><li><strong>Colore<\/strong>: <strong>bruno scuro<\/strong> con riflessi ambrati (il colore dell\u2019uva non influisce: anche il mosto bianco diventa scuro a causa della lunga cottura). <\/li><li><strong>Consistenza<\/strong>: liquido particolarmente <strong>denso <\/strong>e viscoso.<\/li><li><strong>Profumo<\/strong>: <strong>intenso <\/strong>e aromatico.<\/li><li><strong>Gusto<\/strong>: <strong>dolce e fruttato<\/strong>, ricorda marmellata di fichi o prugne.<\/li><\/ul>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div data-particle_enable=\"false\" data-particle-mobile-disabled=\"false\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>Il <strong>mosto cotto<\/strong> \u00e8 un prodotto antico quanto la coltivazione della vite. Conosciuto anche con il <strong>nome di Saba<\/strong> (o sapa), era innanzitutto un dolcificante naturale, gi\u00e0 utilizzato nel corso della storia antica, in epoca romana, quando si otteneva cuocendo il mosto d\u2019uva due volte:<br>con la prima cottura si ricavava una salsa dolce chiamata defrutum (gi\u00e0 impiegata come dolcificante ed energizzante naturale); con la seconda cottura si otteneva la <strong>saba<\/strong>, un composto denso, viscoso e molto dolce, doppiamente concentrato. <\/p>\n<p>La sapa era un prodotto disponibile non solo per i ricchi, ma soprattutto per i contadini di un tempo, che la utilizzavano per rallegrare la <strong>cucina con dolci a base di saba<\/strong> durante le festivit\u00e0, specialmente nella stagione fredda.<\/p>\n<p>I nostri nonni ricordano ancora quella prelibatezza che si poteva gustare solo quando la neve cadeva abbondante nelle nostre campagne: un bicchiere colmo di neve fresca, arricchito con mosto cotto \u2014 <strong>la prima granita della storia<\/strong>!<\/p>\n<p>Diluito con acqua, diventava una<strong> bevanda dissetante ed energetica<\/strong>.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div data-particle_enable=\"false\" data-particle-mobile-disabled=\"false\" class=\"elementor-element elementor-element-b5a9cee e-con-full e-flex e-con e-child\" data-id=\"b5a9cee\" data-element_type=\"container\" data-e-type=\"container\">\n\t\t\t\t<div class=\"elementor-element elementor-element-9bc0855 elementor-widget elementor-widget-heading\" data-id=\"9bc0855\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Uso al Giorno d'Oggi<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-37242f3 elementor-widget elementor-widget-text-editor\" data-id=\"37242f3\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>L\u2019uso del mosto cotto \u00e8 rimasto fino a oggi nelle <strong>ricette tradizionali dei dolci<\/strong>, <strong>soprattutto a Natale<\/strong>, dove pu\u00f2 sostituire lo zucchero, donando dolcezza, aroma fruttato e colore ambrato all\u2019impasto. Successivamente veniva utilizzato come sciroppo per la <strong>congestione delle vie respiratorie<\/strong> e come <strong>balsamo emolliente per i bambini<\/strong>.  <\/p><p>Ancora oggi \u00e8 un prodotto salutare con molte propriet\u00e0, se consumato puro, grazie alla ricchezza di polifenoli e antiossidanti, che<strong> contrastano i radicali liberi e l\u2019invecchiamento cellulare<\/strong>.
