What do we do
We constantly strive to obtain the highest quality and naturalness of the product, even at the expense of quantity. The entire production cycle takes place in the farm, under our eyes, from the owned vineyards to the bottling of the finished product, respecting the nature that surrounds us. We also enjoy making some Extra Virgin Olive Oil.
Our Estate
The Sereni estate is located at Marano sul Panaro, in the picturesque hills near Villabianca. In a rural setting of vineyards and olive groves, this zone is unaffected by industrial pollution. Here, the changing weather and seasons continue to repeat the ancient pattern that has served for centuries to ensure the natural production and ageing of a wonderful Balsamic Vinegar.
How does our production chain work?
Raw Materials
Our vineyards are surrounded by green fields, olive groves, hazelnut groves and wild wood, far from the pollution.
Cooking
The process of cooking gives the Balsamic Vinegar its typical aroma and density.
Aging
Balsamic Vinegar ages in barrels of prestigious wood for a minimum of 60 days to more than 25 years.
Bottling
Balsamic Vinegas has reached all its characteristics and is ready to be bottled.
SOIL
Our vineyards are located on Modena Hills, on a clay-calcareous soul.
CLIMATE
Hot in summer, cold in winter, high humidity. Fresh air brought by River Panaro that flows in the valley.
MENTALITY
Passion, patience, obstinacy, reverence for tradition and healthy balance of perfectionism and obsession.
WOOD
Our Balsamic ages in prestigious barrels made of typical woods like oak, chestnut, juniper, acacia, ash, mulberry, cherry.
The Family and Our Story
Birth of a Passion
A New Reality
It was Attilio, together with his son Pier Luigi, who increased the production until they began to market the first “Balsamics”. Pier Luigi, a founding member of the Consortium for Protection of Traditional Balsamic Vinegar of Modena, as times and commercial needs changed, trasnformed that small family passion into a real company and, with his wife Elisabetta, began to export the first bottles of Balsamic Vinegar of Modena.
Today
Today the family business has reached its fourth generation with Umberto, Francesco and Federica. It is located in a unique microclimate, rich in greenery and biodiversity, with olive groves, hazelnut groves, a large forest and fruit trees. The area has been renamed by the Sereni Family as “AltaModena®”: it is in fact located in the Modena hills, in the town of Villabianca, at 300 meters above sea level.
