The result is a collaboration that redefines the boundaries of taste: Your Food Tonic. Not simply condiments, but White Sweet-and-Sour Dressings designed to elevate every sip with refined acidity and layered aromas.

When the line between kitchen and bar grows thin, projects emerge that chart entirely new flavor paths. This is the case with the recent collaboration between Scuro Cocktail Bar, an iconic destination for signature drinks in the heart of Bologna, and Acetaia Sereni, a historic name behind Modena’s “Black Gold”.

At the core of the project is the use of Your Food Tonic, Sereni’s line of White Sweet-and-Sour Dressings, reinterpreted as true natural bitters and complex acidity enhancers within three original signature cocktails.

The Agrodolce Trilogy: the concept unfolds through three distinct sensory profiles, where acidity is not just an ingredient, but the protagonist.

Underworld

Citrusy, herbal, and complex. At its heart lies Sereni’s Limonceto®, lemon-infused White Balsamic, which becomes the driving force of a cocktail balancing officinal herbs and vibrant citrus freshness. The herbal intensity of Chartreuse Verte and the structure of Gin Tuono create a layered, lingering drink, where citrus sharpness is refined through cordial technique and orange bitters.

Tess

A cocktail that explores savory and umami nuances. The floral notes of White Balsamic aged in Barrels, twist with tomato acidity and the noble structure of Cognac, finishing with an unexpected aromatic lift from fig leaf soda.

Frames

Here, freshness takes center stage. Mediterraneo White Balsamic, with its botanical and balsamic character, acts as a bridge between the bright fruitiness of raspberry and the dry, citrus-driven personality of Gin Tuono. The result is a drink of striking clarity and chromatic elegance.
