Next to the vineyard, the hazelnut grove. The Serenella™ project has its roots in 2017, when the Sereni family decided to expand the crops of the Villabianca estate – already dedicated to grapes for Balsamic Vinegar of Modena and olive trees for EVO Oil – with a hazelnut grove of the tonda gentile trilobata variety (round, gentle, trilobed hazelnut). An agricultural choice consistent with the company philosophy, which aims to enhance the hilly territory, affectionately renamed “AltaModena®“.

The hazelnuts come directly from our Villabianca hazelnut grove, on the hills of Modena, and it is a real spectacle!” says Francesco Sereni, the company’s sales director.

After years of experimentation, the cream comes to life in a balanced recipe, without added oils, fats or dairy products, designed to meet the growing demand for healthier and more natural products. “Serenella™ will intercept the needs of consumers who are looking for healthier products, without added oils, fats or dairy products” explains Francesco Sereni.

 

Serenella™- Hazelnut and Cocoa spread with Balsamic Vinegar

In 2025, Serenella™ will debut, the spreadable cream from Acetaia Sereni with Hazelnuts from AltaModena, to which a few precious drops of Traditional Balsamic Vinegar of Modena PDO are added. A new horizon of sweetness.

It is of an absolute novelty for the Italian confectionery scene: an original proposal, capable of telling a new identity of the Modena area, through a product that speaks of agricultural supply chain, taste research and artisanal vocation.

The touch of Balsamic Vinegar DOP: sweetness, depth and character

The most surprising aspect of the Serenella™ cream is the inclusion of Traditional Balsamic Vinegar of Modena DOP, which has always been the flagship of Sereni production. Added in small percentages, the vinegar gives greater creaminess and an elegant note, which elevates the taste of the hazelnut with depth and structure. The result is an enveloping texture, intense but balanced, perfect for breakfast, for creative pastry making or simply to be enjoyed with a spoon. “It is an interesting and unique product, designed not only for retail, but also for chefs and pastry chefs who want to experiment with something truly new” underlines the sales director.

A product for gourmet shops, chefs and taste travelles.

Serenella™ will initially be offered in the specialized retail channel, in particular in gourmet shops, wine shops and shops that pay attention to research and quality. But the goal is also to dialogue with the world of haute cuisine and signature pastry making, where an ingredient like this can make the difference. “Our goal is to reach both shops that are looking for Italian excellence and cooking professionals looking for new products for their preparations” says Francesco Sereni.

Acetaia Sereni is also looking carefully at international markets. It is certainly increasingly important to consolidate relationships with Italian and European customers, but also with American and Asian ones, who are increasingly intrigued by the combination of Italian craftsmanship and gourmet creativity.
