With the new highly prized “Epocale XX Secolo”, the Sereni family has followed up on long research and its desire to share an exceptional and unmistakable flavor with dear friends and esteemed customers. An “epochal” undertaking, indeed.
This is the best selection that the traditional product kept in the family’s attic could offer. Usually the withdrawal of product to be bottled is done by a single battery, this is the name of the family of barrels that allow the aging of the Modenese Black Gold.
In this case the sampling was made from the best batches of the vinegar factory, which were selected through repeated tastings, to find a balance and harmony that is difficult to obtain from a single batch.
All the barrels that were tasted, to reach the group of the 10 best from which to obtain our Epocale, all belong to batteries that are older than 25 years. A few drops of product were taken from each of the selected barrels, so that each one could give its right contribution to perfect harmony and balance.
